
I’m Manny, and I started Chapter Eight in 2024 after a long journey of figuring out my own intolerances, including dairy, eggs, and gluten. With a serious sweet tooth and not much on the shelves that felt satisfying, I began baking for myself — and soon realised I had found something I truly loved.
What started as a way to create treats I could actually enjoy grew into Chapter Eight after plenty of experimenting, trial and error, and a lot of tasting along the way. I’m always learning, always trying new ideas, and always aiming to make food that never tastes like a compromise. My goal is simple: to create gluten-free, plant-based bakes that are so good, you wouldn’t guess they’re free from anything at all.
