About Chapter Eight
Hello my name is Manny and I am the founder of Chapter Eight.
I want people to feel happiness when they have my bakes, reassured that they have certainly not been forgotten and validated that I am listening to your dietary requirements!
So how did Chapter Eight start? Well not to be too grim, but it started off with years and years of stomach pains, feeling tired and being bloated! I had so many visits to the doctors and basically long story short, nothing was found. Then one day I came across an intolerance test and thought 'what have I got to lose?'. I found that I was intolerant to dairy, eggs and gluten mainly (amongst corn and potato!)... I mean, who has that many intolerances!?
No way could I not eat a beautiful, mouth watering and decadent chocolate fudge cake again!?... I did not accept it. So I went to work and started off with baking my OG plant based and gluten free brownies which were the bomb! I became more and more curious and started baking other bakes such as cakes, pies and cookies, inspried by my travels mixed with good nostagic child hood pleasures! I experimented again and again with different flour blends for different bakes.
One day I finally got the guts and left my corporate world job (I worked in Technology M&A advisory, BIG CHANGE!) and took my first step into the eighth chapter of my life which was selling my delicious indulgent bakes to the world (well Londoners and tourists).
And wala!... Thats the story of how Chapter Eight began and here we are today!
