
I’m Manny, and I started Chapter Eight in 2024 after a long journey of discovering my own intolerances to foods like dairy, eggs, and gluten. With a serious sweet tooth and limited options available, I turned to gluten-free baking and began creating treats for myself — and soon realized I had found something I truly loved.
What began as a way to make satisfying vegan desserts that I could actually enjoy evolved into Chapter Eight after plenty of experimenting, trial and error, and a lot of tasting along the way. I’m always learning, always trying new ideas, and consistently aiming to make plant-based food that never tastes like a compromise. My goal is simple: to create gluten-free, plant-based bakes that are so delicious, you wouldn’t guess they’re free from anything at all.
